Don't worry your not alone on this one. On a few if my vids I have tried using random words ( I know I feel bad for doing it) but I've not found it to make much difference all in all.
But I have no idea which tags work best and if I'm doing them incorrectly or something -- confusing as hell!!!
And most of these networks require a certain amount if views a day which means I can't join until I get tags that bring in the views.

So does that mean making descriptions that feature the keywords at the same time? From what I see from larger Youtubers they just slap their tags within their descriptions. I personally do a unique description with the game title fitted into it, while the rest is information about the channel. What can be done to improve that?

So You Can Do A Unique Desciprtion and Under it write EXtra Tags
and Write things you would write in your tags, still do tags because it helps

I thought it was against the rules to put tags in the description though? I assume larger channels get away with it because well...they are large?

You certainly do not want to be misleading.

But a word of advice, remove the spam, this is both above the ToS and used by YouTube to lower your search ranking.
What I mean by spam is writing the same word(s) over and over in different contexts.

Not If There related to your video I.E not tags but titles are better,
I.E you have a video about cutting cucumbers
And You Video Title is Cutting Some Cucumbers
You Put in the Descpirtion Of Extra Titles Cutting Cucumbers Or Othere ways to say Cutting some Cucumbers
