Why is it against Adsense TOS to tell others how much you earn from your YouTube revenue etc?

Because not everyone earns the same. It's the same reason you can't discuss your wages in the workplace. It's unprofessional and only serves to raise questions and cause arguments.

But in the workplace, its not written into your contact that you cant tell anyone else what you earn. That choice is left to the employee, although most do tend to keep such information to themselves etc.
Whereas with Adsense, its actually part of their TOS - was just wondering why they are so strict on it, rather then not giving users the freedom to decide for themselves........

Actually it is. It's been in every workplace contract I've ever had.
Also, to be totally fair, it's nobody's business what another person earns unless it directly affects you negatively somehow.
The only reasons I can really think of are of like mindfulness and all that. One person with some amount of views per month might make considerably more than someone else than someone with the same amount of views, and it might be sorta discouraging for the second fella.
Never had that in any of my company contracts.
