Categories still exist... They're just not well-utilized anymore. In your channel settings, you assign a category for your channel, and on the Advanced tab, you assign categories for your specific videos. Your channel builds "authority" based on your consistency and success in a category.
Currently, YouTube search filters doesn't allow you to filter based on this. Various third-party plugins could allow this functionality.
The reason categories got removed is because YouTubers abused them heavily for a year straight, dominating the old "homepage" and ruined things for everyone.
