Last thing, when you say to use the keyword tool or YouTube's autofill, that could bring up moderately irrelevant tags, like if I had a video of surfing small waves, a suggested keyword could be "big wave surfing", would I still want to use "big" "wave" "surfing" "big wave" "big wave surfing"? Or would I stick to the things that are completely relevant?

generally no as that could reduce your watch time, the keyword tools are kinda just something you can use to figure out potential tags they aren't anything to follow blindly. But there is such a thing as optimizing for reach instead of for watch time, so you could get indexed for many terms or rank highly for just one. I might tag it anyway because people searching for one might be interested in the other, whatever you do make sure you always use all of your tag box
, that's not to say you have to tag a variety of things you can quite easily max it out on a very specific topic with a bit of practice
