Yeah, or do a few test videos so you can see what you have to do for each video and then once you have them how you want them start uploading them :0)

I suggest you play the game A Dark Room on iOS. It's an amazing text based game. It can definitely give you good ideas for your own game.
 
I've suggested this a lot at my previous connections at game companies and I've been thinking about doing it too as I'm also currently making a game. However, I opted to not do it as I'm experienced enough that I'm cutting a lot of corners etc, which I don't want to teach other people. :D

Also, I think the main reason why people usually don't do it is that if the game idea is great and you show "everything", it's super easy for someone to steal or copy the game. Which for companies is of course a bad thing.

So, to sum it up, yeah, a great idea if your situation allows it.
 
In my opinion the YouTube market is absolutely flooded full of other gaming channels. So if you want to find success as a youtube gamer I feel that you need to be either very funny or be doing something different that other YouTubers aren't covering. Good luck!
