Ooh, tough one. I would check with the terms and conditions of the games in particular. Some games (say Left 4 Dead) you can mod all you want and they seem to allow it, but some devs get funny about it.

Good decision. I doubt you would get in trouble from a YouTube standpoint, but it is good to be on the safe side. Plus, if anyone from Activision happens to see the video, bad things will happen.
