Is being consistent really the key to an audience.

For me not really. I used to upload every other day and got pretty poor growth, now I take some more time to work on videos and make one or two throughout the week, sometimes even skipping a week, and I still get regular subs, views and interaction. It depends on the content you put out though, and of course everyone has a different experience with growth.

Remember that it's a game of quality and not just quantity. You need to be hitting a decent balance of both. If the videos are rubbish then it doesn't matter if you upload daily; you're not going to see much traction. On the other hand, I have seen some channels with absolutely stunning content that must take weeks (if not longer) to make and they have millions of subscribers with comparatively few videos. For most of us mere mortals, the name of the game is to strike a healthy balance between quality and quantity.

You might find that slowing down the release cycle enabled you to make higher quality videos, which turned out to be a better balance. Also, personally speaking, I get burned out by creators who upload daily. I can't keep up as a viewer; my YouTube time is split between lots of competing creators and I don't want any single one to dominate that time.
 
Consistency is a massive thing to stick to in my honest opinion, if viewers can rely on a schedule in terms of knowing when your content will be available and how often, its the first step in getting a consistent audience. Just a quick edit to also add that 100% do not sacrifice quality for quantity, set a schedule for yourself that will allow you to push our quality content consistently, whether that be daily or once a week.
 
One trend that I see often is - if you upload 1 video a week, you will eventually get subscribers - upload 1 a day, you will get a lot more than uploading 1 a week. If your subscribers see that you are consistent then they will stick around.
I guess that's why daily vloggers and daily gamers get popular - their subscribers have something to watch everyday!
