I just don't get it.

I think so many thirst for YouTube to be their source of income because they enjoy doing it and want to be able to enjoy their job for a living. I would say it's very much sustainable when you have a very large channel that brings in a decent sized income. As long as it brings in a decent sized income that can pay your bills and give you some extra fun money then I don't see it as not sustainable. Also on the note of everyone on YouTube has abandon their dreams and goals may not be the case, what if YouTube were their dreams and goals?

There's no way that can be true. I would like a source for that. Perhaps there's a million different channels, but there is no way in hell there's a million channels making money.

Correct. It is thousands of people, not millions. If somebody had three million views a month, that could be $3K - $6K a month, and after taxes, that would be enough to earn a living.

I've heard that number is actually less than 1,000 in the USA. I'm guessing less than 10,000 worldwide based on the following publicly available statistics:
There are about 300 Gold Play Button (1 million subs) award channels and close to 4,000 Silver Play Button (100k subs) award channels. Of these several are the same people with multiple channels, and several are large companies. Several of the channels are multiple people who must split the proceeds several ways.

I'll only say this, since I want to be nice about it.

1. If you think about it, every job is unstable. Any job in the world has the ability to lay you off due to an economic shift that occurs. If you build up enough of a following, you could start your own website with your own video hosting service, do tours, merchandise, etc. Relating to a low time actor.

2. Entertainment is a service. Have you ever seen a movie? Of course you have. You have to actually pay for movies as well, and actors get paid for making movies. YouTube entertainers are more low scale.

3. YouTube can also lead to other real life jobs rather than solely internet based. My friend had a Hookah channel back in the day, and he was hired by either Fumari or Starbuzz.

4. YouTube has a net worth of 34 billion dollars. That isn't far behind Pepsi, which is still in business. And Pepsi started back in 1905.

5. Not everyone who starts YouTube goes in to it looking to replace it with a real life job. You can do YouTube and have a job. I've watched videos on people with around 50k subscribers that do it.

6. YouTube isn't something that could possibly just quit completely. There is so much varying content for you to find on the website at all times, it never becomes boring or repetitive (if you know where to look.) And finally...

7. Why do you even care man? Let people live their lives. It's their life, not yours. People want to play games and share it with YouTube, get over it. Don't assume you know why everyone on the site with 470 million views a day does something.

I have to agree with all of those points you said on there, also some people who is famous on YouTube does a YT vids once a week still have jobs as well
 
I don't mean to sound rude but this seems like it's coming from a point of jealousy or bitterness rather than actual facts. Just because YOU haven't heard of a specific youtuber doesn't mean they're not making a living off of their channel.
In business school one of the most basic fundamentals was that if you have 1,000 TRUE fans then you can easily make 100k a year. Over the course of a year, your fans buy a t-shirt here, an e-book or audiobook there, a dvd somewhere (just $100 a year) then you are making 100k a year. Obviously that still works backwards. A lot of people can survive on 30-50k a year which is ALOT for making money from youtube and you can work upwards.

Anyways, for every "famous" youtuber that YOU know of, I can pretty much guarantee there are 30 more that you haven't heard of making just as much or more than that "famous" youtuber.
