What do you guys class as editing? I mean some people apparently take weeks, some take hours, what do you guys class as 'editing'? Is it just putting clips together like me for instance?

Literally I just have to put my intro, my voice and my video in and match them all up so the timing is synced and them I'm good to render, all the audio volumes are preset pretty much! :) But what's your guys way of editing? I'm curious XD
 
What I do for basic videos: I cut out dead space, fix any audio problem, add any transition or effect needed, add intro or end card if needed, then color correct.
 
I normally just fix my audio and make sure it's clear. I did have to play around with it.
I also make sure that there are no black bars and that it is rendered at a good quality.
Fix any background noise and any bits of my video that aren't necessary I tend to cut
 
What someone does during editing largely depends on the type of content you're making, no? For the average Let's Play it will be loading footage, cutting it to the right length, adding intro and outro and you're done. Same for those simple cut and paste vlogs.

For the more professional projects on YouTube like FreddieW and stuff like that, you're looking at hours and hours of editing, making CG, making graphics. The editing in those things often take just as long or longer than the filming.

Personally I do game tutorials which are partly scripted and partly improv. I cut out the silent parts, cut out stuff that isn't relevant after all and then fix the footage so you don't see any weird cuts or jumps. Add some texts, graphics, outro and background music and by the time I'm done I'll have about 2 hours worth of editing in on one video.
