What happens if I select the option to show my latest uploaded video on my most recently uploaded video, will it just recommend itself, the same video that they just watched?

No, it will show the last uploaded on your channel that is not the one you are watching. This is useful for someone who is watching a video of yours a month or two down the road, the latest will show the last one you uploaded a few days ago.

Yeah, it's a little confusing because taken literally, it means it would show itself. But the video the person is watching is the exception. That endcard will dynamically update everytime you upload a new video.
