Can you use CreatorX for one channel and Adsense for another?

Yes you can. One will be linked to fullscreen, the other will not be and can use adsense or partner with a different network as well.
Since the gmail accounts are not linked, the creator x partnership will not automatically be attached to a different gmail account. And also the contract only applies to one email address (usually included in the contract).
 
It is possible to do that, if you already have Adsense on one of your Google accounts you can add that to your new channel, that way you dont make multiple Adsense accounts which can get you banned :)

Here's the thing. I only had adsense hooked up to channel that is now with fullscreen, how would I go about just hooking adsense up to my new channel without signing up for another adsense account, which I don't want to do anyway. I still use adsense for my blog.

On your new channel, you choose to monetize with adsense, then I think there's an option to say you have an existing adsense account and it will take you to the adsense google login page, and you login to your old adsense account.
